Is there any way to change the career start date in FIFA 11 to start in 2007, just like in FIFA 08?
The current career mode starts in 2010 and so players start out older than they should

I found the Start and end date fields of the competitions in CM11, but it’s only possible change these dates between 2010 and 2011
I think the only way here could be unlock these fields to allow older dates to be filled in, but I don’t know how to do this haha

I have "not full" solution of your problem and maybe this thing give you some help.
In Creation Master 11 you can change default retirement age.
Retirement age for players you can change over 33 years to max 45 years.
For example Zinedine Zidane.
Before change. Retirement age of Zidane is 33 years:
After change. Retirement age of Zidane is 45 years:
We changed retirement age for Zinedine Zidane (born 1972 year)
In this way Zinedine Zidane can end his carrer in 2017 year.

I changed retirement age in all Fifa 06, 07, 08, 09, 10.
But MANY many years ago... Some 15 years ago and more.
I not remember full procedure.
I remember some things.
I exported database with DB Master and open with Excel.
In column "retirement age" I changed for all players age for 45 years.
I saved file and import with DB Master.
