First of all, always check the players threads. Radoi, the guy I just posted starts out at 24, but he's world class and if he's still at Steaua (he won't be) then he's pretty cheap. 2.4M for a world class center back is pretty good in my book.

I managed to sign Huth for my AEK Athens team, so he should be a realistic target for Olympiakos. He did great in the Greek league.

Kostas Katsouranis can play DC aswell, although he's better in DMC, he isnt expensive either

didier digard is very good as both DM and DC, I use him at panathinaikos as my 3rd defender (the other 2 are squilaci and Alex) I also know of an extremely good young australian defender but at the time I found him i was already done with my transfers and had no budget to get him. I will play now and check out his name.
