I have seen Fifa 2001 for the ps2 with Paul Scholes on the cover of the game. I have also seen one with Edgar Davids on the front cover.
Is there any difference within the game and why the different cover?
Will the instructions be in English or Dutch?

No, there is no difference whatsoever, the cover just depends on the country that you buy the game from(same goes for a lot of other games)
ie. UK - Paul Scholes
The Netherlands - Edgar Davids
France - Zinedine Zidane
They are all the same, just different covers

Euhm, I'm not entirely sure on that one but I think in the English game there is an english manual, in the dutch version there is a dutch, English and french manual I think....not sure tho

If it was in the deal when you bought your pc, it could be an OEM 'no frills' version, that they do from time to time to unload all the surplus stocks of games\programs, but no worries, the actuall game should be the same as the Euro or English version, there was a USA version that was deemed to accept certain cheat codes, but i can't really confirm that news .. Ned :D
