One touch pass that *isn't* a 1-2. Every time I try and do a "1 timer" or 1 touch pass and AI always returns the pass to the original passer. How do I avoid that?

Also, using Bolzar's patch, if I use the 1-2 pass via my right analog stick, I can't move my player properly afterward. Anyone know how to fix this bug.

Try holding down the pass button before the player receives the ball. He should then one-touch it in the direction you aim it. Keep in mind that you will power up as you do for a normal pass, so watch how long you hold down the button for...
