I've seen roster patchs that doesn't require you to use access or CC. How do they do that? What files in what folder are they manually changing?

There are two ways of doing it:

1. Hex edit the fcdb.dbi and fcdb_xxx.dbi file. (in data\cmn\fe)
2. Use Access Editing, install the package using CC, then extract those two files in the CC installed package folder, and distribute that. Simple.

How do you change the name of the players and other caracteristics by hex editing? If the player have 2 names how yuo put one? :D And by the way you will not launch Roster Editor?

Do you mean players who have no first name and only a surname (e.g. Ronaldo)? (And for those smart asses, I know Ronaldo is only the nickname ;) )

For that, all you do is give the player a blank first name.
