I am playing with Man United, and is it better to manage the U-19s and reserves by yourself or to have the other coaches do it? Right now I have Qiueroz (sp?) managing the reserves and someone who is the best with working with youngsters working with the U-19s. I have noticed that with the U-19s, the starting lineup is totally different for every game.

Well if you're focusing on a title run, let someone else do it, but if you have time do it. Also changing the lineup every week should be normal, since they need to know what kind of players adapt well and such.
