got that exact same problem and it bothers me. Not only that, when i go into button config in the game and set all my butons and press confirm i sometimes see some buttons changing back again too, not all but some. Maybe it's because i don't have the official demo, maybe i try to download that and see if the problem is over, can't help you here mate

After setting my controller in the settings program it's been working fine for me. That's wierd
Are you guys using the setting.exe file in C:\Program Files\KONAMI\Pro Evolution Soccer 3 Demo version folder?

yes, that's the file i use. I can remap the buttons but in the game i have to remap them all over again
I encountered this problem b4 and have already posted the solution in this board previously.
You MUST install the game in its default directory and when you run the setting, it will stay.
Not sure if theres a better and much more clever way to overcome this but installing the game to its default directory did the trick for me.
Cheers.

I have problems with the settings as well? How did you guys install the game?
My Demo application file is on the D:\drive. I clicked the file and installed the game in my d:\pes directory. The actual game and the setting files are in the same directory d:\pes\Pro Evolution Soccer 3 Demo. When I clicked the setting file the message "The game is not properly installed" appeared on the screen. However I could click the game file and play the game.
I could not save the settings. Had I missed a step somewhere?

Uninstall and reinstall in the DEFAULT directory that PES selects...DO not install in any other location. Good luck
