Oh, yes! You can instruct your player before or during matches in many ways. Here's the things I remember:
How hard to tackle
Pressing/no pressing
Mixed/short/direct/long passes
To which direction the player should pass
Free role/ no free role
running with ball or not
holding the ball or not
attempting long shots or not
decide who should take freekicks/ corners/penalties
Man marking or zonal-if marking, what player.

And you can of course instruct your team in areas like tackling, counter-attack, pressing an so on. You can't say that CM3 lacks in detail...
