No, you cant customize teams.

You are fires only if the board thinks you are doing a poor job as a manager.

I dont understand your last question,but if you are asking if you can return to a team you were fired from, the YES, you can. But you have to prove yourself at your new club,and wait until your old one is looking for a new manager.
