You just cut out the parts of the FIFA 08 kit and resize it to the FIFA 07 kit format. Here's a list of it:

Front & Back: 390x385
Left & Right Short Sleeve: 190x196
Left & Right Long Sleeve: 190x199
Left & Right Shorts: 205x187
Left & Right Socks: 173x188

It also helps if you add a layer with the calssic FIFA 07 texture (the one that came with a game). Somehow I messed up my FIFA 07 a while ago and I found this as the kit for Arsenal

That would be really useful, you only need them to match.

@Euro: I think making minis is quite easier than making full kits, try making some of them and if you have specific questions don't stop asking me.
