Hi mate - how do I put in the alternate gk kits as I notice on Moddingway that in CM you can only see the home gk but there are options for more gk kits when you play - where will I find them?

There are a couple of ways. The quicker one is automatically assign GK alternate kits via RM to each outfield kit type (0 = home, 1 = away, 3 = third etc.) by creating additional kit with kittype + 30, i.e: away GK kit (1 + 30) would be kit_xx_31_xx.rx3, third GK kit_xx_33_xx.rx3 (3 + 30) and so on. This is the same as creating additional GK kits with CM16.

You can also manually assign different GK kits to each outfield kit using assignGKKit() or assign "hierarchy" via assignGKKitPrecedence() which I personally think is the best way to do this because when you combine it with identifyTeamKitColours() the game will assign GK kits automatically based on selected kits to avoid any color clashes. It is really powerful RM feature and is worth looking into, it requires a little extra work though, but is well documented in RM manual.

Sorry to sound like an idiot, but what is rm? And can it change modding way Jersey fonts and collar types?

No reason to be sorry. RM stands for Revolution Mod (@makispla already gave you link to its thread) that lets you alter almost every visual aspect of the game without even touching database. So yes, you can change kit fonts and kit collars. Everything, from how to install to how to use it is documented within its manual. Chances are if you have moddingwaymod installed you already have RM installed as well.
