You can almost edit anything live on career mode with Cheat Engine however, I have been searching around for a way to change a player's nationality via Google and through the search function in this forum and I could not find anything. Is there somebody out there that has been able to do this?

Yes. You could try this simple approach:
Enter "Edit a player" (does not have to be the one you want to change)
Search for his nationality ID
Edit another player (with different nation)
Search for his nationality ID
Repeat with different players until you narrow it down to one adress.
Go into editing the player of which you want to change the nationality ID,
change the ID in CE, exit with saving.
I have NOT tested this myself.
I'm just suggesting something that I would try.
