Btw. You know how to open FIFA 07 in 16:9 resolution like 1080p?4k backgrounds work in FIFA 07. But after some time the game crashes. I think it might be an issue similar to fonts issue I had before. Also small freezes can be noticed when the screen is loaded (1 file = 32 Mb)
I will try with 2k backgrounds later.

Well, I only have 1280x720p and 1280x1024p

If you connect your PC to a full hd TV (through a HDMI cable in recommended), 1280x720p will work in Full Screen. If it doesn't automatically works in Full Screen, you can change the format ratio from the TV settings. It's still just 1280x720p but I guess it's a little stretched to work in full screen.

I actually made a video tutorial about this; about how you can play FIFA 07 in 1600x1200p (4:3 ratio) in window mode. You also have the option to adjust/stretch it a little to make it work in full screen. On a monitor who's having a 4:3 ratio works/looks the best I guess. But I have a little lag in this resolution. Maybe it's because of my weak graphic card though.

I also got crashes with 2k textures (8 Mb files), so I decided to try with compressed (DXT1) 2k textures (1 Mb files). So far works well with this combination. The quality is not that good as 4k textures, but still much better than original.
I think the game might use some cache for loaded files or loaded textures, so if there are many heavy files loaded, some limit might be reached. Have no time nor desire to further research this at the moment.

So, I completely rewrote fonts rendering and now the memory limit can be bypassed. However, there are many problems with text alignment and positioning, because the game uses some hardcoded scaling for font textures.
And on some screens this creates a problem.

FIFA 06's gameplay is (in my opinion) worse than FIFA 05's gameplay. FIFA 07 is much more superior to FIFA 06 mainly because of it's gameplay, career mode, wide resolution (1280x720), and some other smaller things. Modifying the original FIFA 07 gameplay could only make the gameplay worse. CEP (career expansion pack) did modify the original FIFA 07 gameplay and it sucked! Try to play on World Class or Legendary difficulty if the gameplay is too easy for you. If that's also too easy, don't choose to play with the best teams.
