Here's a quick and simple tutorial on how to skip language selection in FIFA 16 with any language:
1. Delete english_us.big in the main folder (otherwise you won't be able to use a language different from English). Alternatively you can open it with an hex editor (Notepad will corrupt it) and change the DEFAULT_REGION value to your language iso codes;
2. Open install.ini in the main folder with any text editor and add this:
where xxx,xx is your language iso code.
3. That's it, you're done!
List of available language iso codes:
