Try using GBA of Belgium.... I am in 2012...won the league four times, five league cups, Champions League semi finals twice, UEFA Cup finals once....damn hard though...but you don't have to wirry about EU laws which makes for a fun team.
Also try Utrecht , no EU laws and they have a nice crop of youngsters to keep you going for years...... if you want the ultimate challenge and the only one I have failed with time and time again..... build a MLS team up and try to get them the World Club Cup.... I came very close with the Metrostars...but Effenberg was sent of for red card and Boca Juniors tied it and then won in extra time to send me home from Germany crying.

Another interesting challenge is to go to the ediditor, give a good club all the best players and set the reputation really low. This way, all the players want to leave. You sell them for good prices and are left with loads of money and a club that no-one wants to go too. It is very interesting to see what happens.
I last did it with Chelsea. I had £700m (even though I could only spend £40m at a time) after selling nearly everyone. The best players I could get were the likes of Miroslav Klose (although I had Tsigalko and Gomez) and I came a suprising 3rd in the league.
Give it a try some time! (To reset the editor just uninstall and re install CM, you wont lose your saved games!)
