Is there any way, be it in-game or via an external application, to move players from one team to another in manager careers or tournaments? Or are those files uneditable after commencing the mode?

Well theoretically it's not impossible. It can be done, but requires some modification to the gamefiles. Some dude made a patch which enabled it, mentioned it here in the forums, but the link is long dead. I haven't heard anything from him since then. I've planned to do this patch myself and release it, but I am busy with other patches atm.
If you want to look into it yourself, I'd say you'd have to mod the following files:
FIFA 16\data\ui\layout\careermanagerhubcfg.xml
FIFA 16\data\ui\nav\mainfeflow.nav
FIFA 16\data\ui\nav\careermode\mainmenuhubflow.nav
Reading you post reminded me of this particular feature, and so I have sent a PM to the original creator. Let's hope he is still active
