you make them with the C-stick, just move the stick to a direction and the player will make a move.
If you press and hold the Z button (walk) and move the Cstick in different directions the player will performs several freestyle moves to confuse the opponent. However, you must have a player with good dribling skills to not lose the ball while performing the moves.

To make different moves try different combinations, for example hold the Z button and tap the C-stick twice to a certain direction and your player will do something,then if you tap once it will do something different,etc.
There are other tricks too,like a 360 spin with the ball that you do while holding the Z button and quickly rotate the Cstick. Like I said before you need a player with good dribbling skills to perform these moves
