Okay. No one else knew, so I found out through trial-and-error. Here are the controls for Playstation...
With Ball
tap Triangle - speed burst
O - shoot
Square - lob/cross
X - pass/side-of-foot shot (if you're in the 18 yard box, and there is no pass/lob arrow)
L1 - through pass
tap L2 - hurdle
hold L2 - double stepover
R1 - shield ball
tap R2 - 360 spin
hold R2 - rainbow kick (flicks it over head)
While Shielding
L2 - lateral sideways
R2 - 180 spin exit
tap L1 - dive
Without Ball
X - switch player
O - conservative tackle
Triangle - speed burst
Square - sliding tackle
hold L1 - charge goalie
L2 - rush ball carrier
R2 - offside trap
R1 - dangerous tackle
Ball in Air
O - header shot
O twice - volley shot/bicycle kick
Square - header lob
Square twice - volley lob
X - header pass
X twice - volley pass
Defending a Dead Ball
X - select player
Square/Triangle/O - icon defend
Free kick/throw-in
X - Kick
Square/Triangle/O - kick to icon player
hold L2 - add left ballspin
hold R2 - add right ballspin
Goalie drop kick
Square - throw
O/X - Kick ball
L1 - drop ball
