Hopefully you can find something of use here, I've been mostly using England so far.
Use L1 dribble with Heskey/Vieri's/anyone with good body strength to shield and hold up the ball.
Use R2 dribble for your owens/totti's when running at defenders, as soon as your past use R1 to make use of the space behind them you've beaten.
Remember, strikers loose the ball alot in football
Have you played with your formation settings? If not this is why your players are a bit stagnant. The standard settings are pretty conservative, with England having four cms that won't go flying forward too often(makes sense as cms are there to hold up the ball).
I've changed Beckham to RM, Dyer to LM, Scholes to OM and left Gerrard as a CM and this helps movement alot.

Another way to get your player to move is to tell them to. Each player has an individual attacking "attitude" where you can adjust how likely they are to make forward runs(and the direction of the runs). You can also adjust their defensive attitude which lets you leave your attacking players further up the field.
(Formation->individual->attack/defence)
There are also pre-set attacking/defensive attitudes under Quick settings that sets your players for you eg all out attack, counter attack etc.
