No matter how hard I try, I cannot win a header. Which button is it to head the ball? I have tried all of them, so I don't know if it is just my timing?

What do I have to do to win a header?

It's not so HARD! Take it easy
To win a header, You should use W button, Who have pressed it LAST wins a header - NOT First. Best way is to push W quick a lot of times while the ball is in the air!
To score a header You shold make a run (Q) by player inside the box 1-2 seconds before the cross, then cross to him, If hi if first on ball, he'll scores automaticly!

I use a joypad to play the game, so I don't know which buttons "w" and "q" are. Is it the pass, lob, shoot or sprint button?

W button is the one which makes the goal kepper makes an exit. When you press the Q button in the keyoard a line of dots appears in one player and this player automatically starts to run on this line.ok???
