So would this overwrite the default scoreboard or could I apply this to one of the Scoreboard Changer's Champions league Scoreboard?

Just search for "tint" in asc text and erase all the string placing zeros in hexa values. If you find "mcTint", for example, erase all the text, not just the "tint". Since you had replaced it with 0, save and you'll see the colors defined in 0 file.
